The show The best bakery in France is back on M6 for a 12^e season. From Monday 3 to Friday, February 7, 2025, ten artisans from Basse-Normandie will be in the spotlight.

Among the five bakeries of the Orne in the running, there is that of Mixle-sur-Sarthe “With mixed flavors”, located on the Place de la Commune.

The filming chez Martial and Eleonore Bonnet took place in September.

“Always enriching”

“It lasted a fortnight and at the end of August we received the final answer. We were a little stressed to know anyway, ”admits, smiling, martial.

To participate is a way of judging yourself, of having the advice of professionals. It's always enriching.

There is still a final step to take: to validate the favorite product. Whoever must distinguish each craftsman, his paw, his know-how …

“I made a proposal that included a local gastronomic product. The team, always on the phone, guided me, advised on certain breads. But I changed everything at the last moment! And they validated. »»

Impossible to know more: the secret must be maintained until the broadcast of the show. Ditto for the mystery product, the one that the baker must make in three hours with a raw material imposed by the jury.

The jury, precisely: how was the meeting with the flagship animators of the show? “The team arrived, Friday, September 20, from 6:30 a.m. on Friday, September 20, between 15 and 20 people in total! It made people in the bakery, we didn't expect it, ”said Eleonore. “But, quickly, they made us comfortable and the relationships were very simple and easy. »»

To taste and judge, they were dealing with Bruno Cormeralsbest worker in France in 2004, and the pastry chef Chiara Serpaggi (which replaces Noémie Honiat, restrained all week for professional reasons).

“Bruno and Chiaria stayed all morning. They tasted products in stores and chatted with Éléonore, ”continues Martial.

They then came to the laboratory in order to taste the favorite product that I had made. They were really pleasant and gave me interesting advice. We felt benevolent professionals.

The two animators have returned to around 12:30 p.m. in the afternoon took place the shooting of the production of the mystery product and the couple's interviews.

“I stressed a little for the mystery product. I had Jeremiah, my pair, with me. He also helped me for the favorite product … Suddenly, I watched previous programs to find out what to expect. But I was totally surprised! »»

After this exhausting day, Martial and Jeremiah went to the Haras-du-Pin the next day for the tasting of this product, in the presence of the other candidates and the jury completed by Chef Michel Sarran.

Éléonore, on the other hand, had resumed her work in the store.

Without being able to explain customers too much why the bakery had to close a few hours the day before. And this despite the accomplice smiles of certain customers, not really fooled …

“I am proud of what I did”

The couple keeps the notes obtained – Boutique printing, favorite product, pastry, mystery product – and ensures that they have no regrets. “Everything happened very quickly, then, sometimes, we say that we could have done differently, or be explained differently,” concedes the baker.

But I am proud of what I did. And the whole team supported us and was happy to participate.

No doubt he nourished a slight apprehension to discover the assembly which was carried out by the shooting team. But he will be in front of his television post, Thursday, February 6, to discover his bakery, whatever happens.
