Japan crowned world pastry champion in , arrives second

For the second consecutive time, Japan won the world pastry championship that was held in this Saturday. “It's hard,” said the French team coach, who arrived second.

Thanks to its chocolate-piece of chocolate, Japan won the Pastry World Cup on Saturday, ahead of and Malaysia, thus retaining its title after two days of competition near Lyon, in the center- is France.

“It's amazing!” Launched the Japanese team by housing on the first step of the podium, a fourth consecration since the creation of the competition in 1989, which traditionally took place at the International Restoration Show, Hotel and food (SIRHA), a major meeting of professionals in the sector.

“What really made the difference was the chocolate piece,” said the famous French pastry chef to AFP Pierre Hermé, also president of the competition, greeting a team with a “real power, a Real desire to win “.

Eighteen teams from around the world, from Argentina to South Korea via Mauritius, clashed during this final.

Each, made up of a chocolate maker, a sugar expert and a master glacier, had nine hours to take up three tests while respecting a common theme: putting their country in the spotlight.

They had to prepare three frozen desserts based on fruit puree, a restaurant dessert erected on “minute” plates, and finally, a rain of small chocolate creations, to taste like “Finger food”.

Three artistic pieces, real works of art assembled in parallel (one in sugar, one in chocolate and one in carved ice), came to complete it.

Those of the Japanese team represented an imposing Japanese theater character, traditionally made up of red and white, a Japanese lantern, barley sugars, also in the colors of the land of the rising sun.

“Little worries” French side

Tears of joy for Japan, but of sadness for France which could not hide its disappointment by rising on the second step of the podium, the same as two years ago.

“It's hard,” said La Presse Franck Michel shortly afterwards, coach of the French team.

The latter, according to him, met “small concerns” when putting the centerpiece at the end of the competition, due to the ambient heat preventing chocolate from crystallize and causing a little breakage. The French had made a triptych, including a sublime blue and gold rooster deploying its wings, perched on an ice structure engraved with a rosette.

The last two editions have been won by Japan (2023) and Italy (2021). France was imposed in 2009 with Jérôme de Oliveira, as well as in 2002 with Christophe Michalak.
