The cold of this month of January brings joy to market gardeners – rts.ch

The cold winter weather doesn’t just make people unhappy. For market gardeners, low temperatures allow the soil to be aerated and eliminate pests. The gel can even give a special flavor to certain vegetables.

For market gardeners, the gel has many virtues. Red chicory, for example, provides natural cleansing. “We need this period of frost to burn the large leaves that grew last year. Afterwards, it makes little rosettes, it’s really the heart that we eat which is very tender,” explains in the 7:30 p.m. Serge Gonin, market gardener.

Cold is also essential for soil preparation. “In fact, we have very fine, very flexible soil. The frost explodes the moist soil. With fine soil, it will be easier to sow and plant.”

Other vegetables enjoy winter, such as rampon. This vegetable actually has a particularity: the cold gives it better flavor. “The plant will protect itself from this frost by trying to increase the quantity of sugar in the cells. This gives a little different taste to the rampon.”

The winegrowers also satisfied

Winegrowers are also satisfied when the vines are completely asleep. The cold allows the plant to regenerate. However, they are hoping for a good season to avoid any unpleasant surprises in the spring.

“It would be good for this to last, for it not to wake up too early. It’s important that the cold is there during the winter and if we can until the end of March”, notes Bernard Bosseau, winemaker, recalling that in 2024, it was not the negative temperatures in April that caused problems, but above all the 25 degrees in March, because the vines woke up too early. “At that moment, the buds burst and when the cold came, the vine froze.”

The cold is also a great ally for fighting parasites and insects.
