10,000 cookies per year
Because here, everything is done by hand. No mass production, but almost daily batches made with the same know-how since the first pastries of Claudine Kropf, the mistress of the house.
The star is the little shortbread : the small buckwheat shortbread, the chocolate shortbread and the small salted caramel shortbread, the first production to come out of the oven.
Having worked in the food industry since 1983, Claudine moved to Pouliguen in 2011 and created a tea room in 2012.
I often accompanied the tea with a little shortbread that I had created myself and over time people asked me how they could get some, and that's how I started production.
This first success gave him the idea of founding the biscuit factory the following year.
In 2014, it was the consecration with the Ateliers du Gout which offered him the opportunity to participate in the first gastronomy fair. From there, the customer base expanded and nearly 10,000 cookies came out of the oven each year.
Building on her success, she tested new recipes.
We are developing gluten-free ranges and occasionally, we decorate our shortbread in Christmas and Easter colors.
A family business
Over the decade, business grew and Claudine surrounded herself with her daughters Heidi and Amélie to run the business. Claudine takes care of the production, her daughter Heidi of the kitchen and Amélie of the administrative part.
With their help, she continues to expand the range of her delicious artisanal creations, based on shortcrust pastry, with or without gluten.
And the main sales take place on market days, with a dealer installed on the corner of rue du Centerthe biscuits are now available from several merchants in Pouliguen, but also in La Turballe, Piriac, and Terre de sel.
Pouliguen market on Friday and Sunday, from 9 a.m. to 1 p.m.
