Balanced, deep, rounded… The three “In Vino Fabula” vintages from the City of are causing a sensation

This Tuesday, December 17, the City of welcomed wine merchants, restaurateurs and specialist journalists to Château Comtal as part of an exceptional tasting: the discovery of the three “In Vino Fabula” vintages. Wines that have aged for a defined period of time in jars.

For fans, the event was not to be missed. Throughout the morning of December 17, wine merchants from the region, local restaurateurs as well as specialized journalists went to the City of Carcassonne to spend two hours between the walls of the Château Comtal. It was not a historical visit, but a moment of tasting.

Every year since 2022, the “In Vino Fabula” vintages are presented, wines which have aged inside jars placed in the basement of the building. At the end of 2024, these professionals and amateurs of the domain were able to discover three, all from the department: the domains of Crouzet, Sainte-Valière and Charlemagne were selected.

As a reminder, at the origin of the project, the Center of National Monuments launched a call to local winegrowers with the aim of creating a special vintage which would contribute to the preservation of historical heritage. Two years later, the approach still stands and even intends to continue since up to four winegrowers can be welcomed each year, with the intention of preserving over time the wines which age in the cellars.

Three vintages that stand out

During the presentation, Baptiste Ross-Bonneau, independent sommelier, was responsible for leading the tasting. He returned to this event: “For the first estate, we were able to discover a vintage aged for nine months in barrels. It was characterized by its balanced and deep side with a touch of lightness. The second stood out for its power and its roundness The aging of this vintage lasted longer since it began as soon as the project was set up, in 2022. Finally, concerning the Charlemagne wine high school, bottling was carried out a year ago, then. THE everything was placed in the cellar. We found vegetal aromas in this vintage.”

If a new edition of these annual tastings must take place in 2025, for now, “no date has been communicated” to this year’s host.
