Visit Nadal, a century-old coffee roaster; Les Fromages de Sylvain, for its excellent selection of cheeses and wonderful sense of humor; and the new stand which sells brandade de Nîmes, this creamy preparation made from salted cod and garlic, an emblematic dish of the city. » It is with these words that the journalists of the Financial Times describe Les Halles de Nîmes which they hoist among the 30 best markets in the world.
