The “Distilleries Paris Tour” begins this evening. Six establishments are participating in this highlighting of local know-how that has long been pushed outside the borders of the city and Paris but which is gradually regaining its place in the heart of the capital. Julien Roques, opened the Baccae distillery in 2018, he is one of the participants in this year's “tour”: “It was forbidden to distill in Paris and Lyon at the beginning of the 19th century, probably for security reasons, but if you consult the directory of the time, there are more than 100 producers. Although there are not yet a hundred of them, the world of distilleries nevertheless attracts more and more city dwellers. The ban on producing alcohol in the city having been lifted many years ago, stills are flourishing and producing many different alcohols.
A renaissance that Julien Roques explains by the return of the cocktail on the menus but not only: “Many actors want to find meaning in their work and are moving towards a craft profession. In France, we also have a great tradition of regional distillation. It is true that for 10-15 years, there has a real dynamism created by the offer thanks to the cocktail but also by the desire to consume quality products”.
