What are we eating?
Let’s start with a plate of dried meat game, let’s succumb to the snail gratin and sot-l’y-laisse and its creamy parsley sauce. A rascally pleasure where the pieces of bread are obviously dipped with relish. And then comes the time for the hunt, in two courses with the deer steak served with noodles, apples, Brussels sprouts and forest sauce. Then comes the venison medallion accompanied by rösti, red cabbage and Chiboz kohlrabi, chestnuts , pear and blueberry sauce. A small downside, the sauces lack depth and are far too liquid.
