Pas possible dispute: Paris is one of the timeless capitals of gastronomy. If the city is overflowing with Michelin-starred restaurants – 122 to be precise – it is also home to a number of quality bistros, these establishments so representative of the French culinary culture. Throughout France, everyone has their favorite bistro or café.
Paradoxically, they are in danger: their number was divided by 10 during the 20th century.e century. Today there are fewer than 40,000 in the country. An association has just had them included in the French intangible cultural heritage and is campaigning with UNESCO for that of humanity. If there is one who has always defended them, it is the gastronomic critic Gilles Pudlowski, former writer of the Point. The journalist is releasing his new guide these days: the Petit Pudlo of bistros 2024/25.

Celery remoulade, herring apples in oil, leeks in vinaigrette, egg mayo, beef bourguignon and other sausages and mash are on the menu of this book, which compiles the favorites of Pudlowski and his team in the capital. Among the 150 places referenced, let us cite L'Épi d'or by Jean-François Piège (Iis arrondissement), the starred chef who regularly entrusts his recipes to the PointChez Georges (IIe), sixty-year-old and dashing institution, Halfway (XIVe), character bar of Virginie and Nordine Labiadh, or the Paul Bert (XIe) by Bertrand Auboyneau and Gwenaëlle Cadoret, an absolute reference in the field.
The guide also lists more discreet but equally interesting zincs such as Le Chantefable (XXe), 1900 bistro led by Tom Le Fèvre, formerly of L'Escargot Montorgueil and the Michelin-starred restaurant L'Arôme. With a print run of 30,000 copies, it will be available from November 22 on newsstands, at a price of €9.90, and offered “at good tables”, subject to availability, in the 150 establishments listed.

Alongside the release of the guide, Gilles Pudlowski rewarded, Monday, November 18, 7 of the selected addresses with a special trophy. That of “Bistrot of the Year” was given to the Grille Montorgueil, a once-in-peril gem, taken over 5 years ago by Laurent Nègre, which has the distinction of housing the oldest zinc counter in Paris. “Croque monsieur with brie, divine homemade foie gras, celery remoulade with chorizo without forgetting this imperial sausage from Conquet, the royal aligot and the ballet of beautiful meats delight their people in good humor,” specifies the column.
