“Now everyone does it in the village. » In Saint-Pierre-d’Entremont (Orne) for several months, a recipe of cake passes from hand to hand… and seduces all taste buds.
At its origin, Ghislaine Derrien, 72 years old, and historical resident of the town. In this mid-November 2024she talks about how her preparation found itself at the center of attention.
“It’s a cake that I made from time to time at home. The recipe was given to me by a friend from , where I am from,” begins the woman well known for her culinary skills. Discover the secrets of its dessert.

A name that started as a joke, then made official

After having a couple of neighbors taste it, immediately won over, Ghislaine decides to prepare her soft cake for a charitable cause: “in 2022, for the Telethon activities in the village”. The recipe will then be named.

I was asked to name the cake. In a joking tone, I responded L'Entremontais, and it has stuck ever since.

On the sweet stalls, “the Entremontais is always the first to leave”. How to define it? “It looks like a sponge cake, prepared with brown sugar and almonds on top,” describes Ghislaine before adding: “it’s a cake to share because it is the entire width of the drip pan.”

The recipe goes around the town

Since its first sale, the cake has not been forgotten, quite the contrary. “While waiting for the resumption of the grocery store from the village, an association was created so that the place does not close. It brought the residents together a lot. » The recipe quickly spread around the town.

Many people go to the kitchen to find the special flavor cake. “He is excellent,” agree three of them: Marie- Pouteau, Marie-Pascale Philippe and Claire Payen.

This is an original cake, because on the Internet we have not found a similar recipe. Of course, we wouldn't want to steal an already existing creation.

A cake in the name of the village : the news becomes official. “The recipe was even published in the municipal bulletin,” smiles Ghislaine Derrien proudly. A culinary creation which gets people talking, and certainly makes their mouths water…

A quick family cake to prepare

“For those who want to taste Entremontais, we will prepare it on Friday November 29 in Saint-Pierre, once again for the benefit of the Telethon. » Otherwise, the simplest thing is toput on your apron at home. “It’s very quick, it’s done in 20 minutes,” notes Ghislaine, who takes part in the cooking workshops organized twice a month in the town.

Why not learn how to prepare the famous cake? “It’s true that it’s an idea that we can think about.

If everyone is free to reinterpret the recipe according to their tastes, note that authentic Entremontais is even better accompanied by a scoop of ice creamwith vanilla or a fruit salad.

The Entremontais recipe

For 10 to 12 people.

• Base
– a 20 cl pot of crème fraîche (the pot of cream serves as a measure);
– 4 eggs;
– two pots of flour (same height as the cream);
– a pot of sugar, 1/2 sachet of yeast, a pinch of salt, a sachet of vanilla sugar;
– Turn on the oven to 160°C;
– Make a well with flour, yeast, sugar, add the other ingredients, mix;
– Place a baking sheet on your grill pan, spread the dough, put in the oven. Cook for 15 to 20 minutes depending on the oven: the cake should be slightly golden, if the cake puffs up, prick it with a fork.
• Trim
– 125 g of butter;
– a pot of brown sugar;
– 2 sachets of 125 g of flaked almonds;
– 4 tablespoons of milk;
– While the cake is cooking, melt the butter with the milk in the microwave, add the sugar and almonds, mix;
– Remove the cake from the oven, spread the filling on the hot cake;
– Set your oven to 200°C grill position;
– Leave the oven door open;
– Place your cake just under the grill;
– Watch, as soon as the almonds are golden, remove the cake from the oven.
