What attracts visitors from outside the Jura borders is also the taste according to Philippe Soltermann: “We still have tastes specific to Saint-Martin”. While supermarkets offer products from all over the world all year round, “consumption eludes us”. Gradually, “we lose the taste of food and Saint-Martin is the taste of the land.
