Céline Montolio and her husband fell in love 5 years ago with “La Bouzigue”, a small house on the hillside in Nauviale.
A nurse for around thirty years, Céline is interested in health through food, convinced that “we are what we eat and what we drink”. This is how she immersed herself in the study of herbalism to improve her knowledge of the virtues of plants, then put them into practice by producing, for family consumption, an ancient Chinese drink resulting from the fermentation of tea. sweetened by a symbiosis of yeasts and microorganisms, kombucha.
“It is a refreshing, naturally sparkling, alcohol-free and lightly sweetened drink. As in yogurt, the health benefits come from pre- and probiotics which promote digestion and strengthen the immune system.” Céline wanted to share her know-how by creating a micro-enterprise “Les drinks naturel de la Bouzigue”.
The opportunity for her to enrich her range of drinks, by revisiting simple recipes, most of them old and traditional. This is how kombucha was added with ginger beer, a sparkling drink made from ginger, kôso made by fermenting raw plants and sugar which can be consumed as a classic syrup or to flavor yogurts, creams, desserts… and a whole new range of plant-based drinks.
“After obtaining organic certification last April, I was finally able to hold my first markets in Figeac on Saturday and in Marcillac on Sunday, delighted with the welcome from the customers that met my expectations.” Céline's drinks are also available at P'tit bio and Au montagne dans l'herbe in Marcillac, at the Adeline grocery store in Decazeville, at the associative grocery store in Pruines and at the Artisous cheese shop in Rodez. They can also be found in local restaurants: La Cascade in Salles-la-Source, la Cave d'Armand and the Living room in Rodez.
