The Parisian food scene continues to expand with a host of new restaurants to discover this season in Paris.
Sola, Cellar & Ceramics
Two streets from its elder, eponymous restaurant crowned with a Michelin star, Sola, Cellar & Ceramics has just opened its doors in the discreet rue Maître Albert in Paris. Between the walls of an old 14th century vaulted building, all the subtlety of the Japanese art of living is still celebrated there. Welcomed at nightfall, visitors discover, on the ground floor, a fine selection of natural wines and other sakes, a ceramic workshop (another passion of the chef Kosuke Nabeta which also offers workshops) and a small garden. With a glass of champagne in hand, they are then invited to the lower level, where the experience continues leaning against an ebony counter. In the purest omakase tradition (from the Japanese “I leave it to you”), the menu is therefore prepared on the spot by the chef who also created most of the containers. On the program? Two-stage oysters flavored with lovage, barely grilled red tuna with buckwheat covered with a thin layer of beetroot, imperial shrimp swimming in a bisque broth, abalone rice, sole accompanied by red cabbage and chestnuts… Each plate is accompanied by Japanese sake and other good wines selected by the sommelier Lora Terrade. Cherry on the cake? A matcha dessert topped with a leaf-shaped cookie completes this poetic culinary ballet.

FLOOR
Newly inaugurated in the heart of the golden triangle, Floor highlights Spain, its colorful architecture and its Mediterranean-oriented cuisine. Decorated by Lazaro Rosa Violanthe place is adorned with a titanic aquatic fresco created by Chloe Costes (Atelier Costes), an immaculate installation inspired by Park Güell or even painting ofAndres Valencia. Sharing table, the menu is designed to be enjoyed the Spanish way, picking here and there from the different plates. Among the must-haves? The famous Padrón peppers, o'toro sashimi, Bellota ham, grilled octopus, linguine with caviar or even churros to dip in salted butter caramel.
