For this concourswhich took place on the Ker Lann campus in Bruz, she competed against nine other young pastry chefs.
I had to prepare twelve tartlets, two Paris-Brest for six people, two savarins for six people, molded chocolate candies and a creative chocolate piece on the theme of the Olympic Games.
All in seven hours. “It’s a lot of work, a lot of preparation. It takes willpower. She’s trained quite a bit. She came back here on Mondays, outside of working hours,” says Éric Brault, who is delighted with the dynamic that this participation in the competition gives to his company.
Maëlia Leportoux especially scored points “on production and organization in the lab” and the jurors gave her advice to improve, particularly on tasting.
Wise indications which will undoubtedly be useful for the regional events which will take place next November, in Quimper, on the theme of sweet festivities. “These are completely different events and themes.
