In good weather, the starred chef Irwin Durand will open his first restaurant in which he soberly named after his first name, IRWIN.

The chef Irwin Durand is preparing to inaugurate its premier restaurant inasmuch as chef-ownerin mid-April next. Soberly named IRWIN, this opening marks an important step in the career of this young talent of 35 years oldalready crowned with two successive Michelin stars, one during his time with Alan Geaam, the other at Chiberta.

Located in the heart of Triangle d’Or Parisian, this new establishment will reflect the chef's unique vision: daring cuisine, anchored in French terroirs and inspired by his childhood memories. Through IRWINthe chef wishes to celebrate his roots and give back tribute to his great-grandmotherIrma Durand, a true source of inspiration for him.

“This project allows me to fully share my vision of cuisine: a cuisine of taste, textures and creation, where each plate is an invitation to rediscover the richness of our terroirs”, explains the chef. “Cis a tribute to my great-grandmother Irma Durand, who has always been a force of life and an example for me. Through this project, it is her tenacity that I celebrate, by opening my table with the same passion and the same perseverance that she transmitted to me.”

In a setting that is both intimate and contemporarysigned by the JOD architecture agency, guests will discover an atmosphere between chiaroscuro and carefully selected materials. IRWIN will also be distinguished by its concept of two distinct rooms: one welcoming 22 guests in a refined decor, and the other, even more intimate, able to accommodate 8 to 10 guests around the open kitchen.

In collaboration with Camille Larqueminits executive chef, Irwin Durand will unveil a constantly evolving menu, highlighting local products and flavors of yesteryear twisted with a certain contemporary audacity, in an approach which aims to redefine the codes of haute cuisine.
