Thursday, December 6, in the premises of the Vendée bakery and pastry federation in Mouilleron-le-Captif, the competition for the best galette des rois 2025 took place. Four simultaneous competitions took place: almond galette, original galette, plain brioche galette and fruit brioche galette.
On the theme of citrus fruits
Four juries got to work from the start of the afternoon, one jury per category.
Each jury is made up of four professionals and a consumer, and rates the products according to several criteria: appearance, texture, taste, etc. Tasting is done blind.
For the fruit brioche pancake, this year, we imposed a theme, that of citrus fruits. There was such diversity in the products presented that the juries had great difficulty choosing. With a single theme, it became easier.
Likewise, for the almond pancakes, “this time they all had to have a so-called bicycle wheel presentation”.
A level that climbs
Despite everything, the choice was particularly difficult: “Every year, the level rises! The original pancakes have particularly impressed the jurors. »
In most categories, the result was decided by a few points.
A rare event, it was necessary to bring together a jury a second time to decide between two cakes having the same number of points, while the competition is played out on 100 or 120 points.
Jean-Noël Pubert, with 45 years of experience in the profession, specifies:
“The important thing in the non-brioche pancake is the flakiness, because the customer buys first with the eyes. Today, we are increasingly using what we call reverse lamination. A good pancake requires several days of preparation, with at least five turns of the dough to create the lamination, which requires at least three days. »
The palmarès
Almond pancake category (45 participants):
1st prize, best pancake 2025 in Vendée, goes to Bec Sucré Salé, in Challans. This is his first participation in this competition.
2nd: O Délices d’Alex, at L’Oie
3rd: Prouteau bakery, in Nesmy (which has been voted best galette in Vendée three times in a row in previous years)
The first two will participate in the competition for the best pancake in Pays de la Loire, and could possibly qualify for the national competition.
Original cake category (29 participants, imposed theme: citrus fruits):
1st prize: Douce et Craquante bakery, in Luçon
2nd: Origine bakery, in Challans
3rd: Lucette bakery, in Les Sables d’Olonne
Plain brioche pancake category (35 participants):
1st prize: The Moulin bakery, in Saint-Révérend
2nd: O Délices d’Alex, at L’Oie
3rd: Dagbert bakery, in La Gaubretière
Brioche fruit pancake category (19 participants):
1st prize: Georges bakery, in Saint-Gilles-Croix-de-Vie
2nd: Paquier bakery, in Aubigny
3rd: La Briocherie du Gois, in Beauvoir-sur-Mer
