You surely know its castle and its forest, but the royal town of Rambouillet is full of many other surprises.
-It is in this island of wild nature that we find the national sheepfold, a historic farm created in 1785 by Louis XVI in the park of the Château de Rambouillet. A house that houses prestigious residents with unusual wool: merino sheep, a gift from Spain to the King of France.
Leaving the gold of the Château de Rambouillet to the crowned heads, Yvan prefers a trapper's cabin nestled deep in the woods. You can discover a pond, majestic oaks and even hear the bellowing of the deer at nightfall.
The walk whets the appetite, Yvan Laurent Trochain at his restaurant. This starred chef is the inventor of Yolin, a specialty aimed at promoting local products from Yvelines. He organizes a competition for the best Yolin where amateurs try their hand at making this dish made from eggs, flour and milk to which are added three local ingredients. But which ones?
