Several brands sell very good ones, in our ardent city, cradle of this honeycomb pastry specialty. But to enjoy them cold, you need a much more rigorous and subtle preparation… than when you serve them hot.
Since the closure of the Eggenols patisserie, rue des Guillemins, we have been wondering where to find the best waffles in Liège.
Well, the answer came thanks to a reopening. In September, the Groffy pastry shop returned to Bergerue, in Le Carré, after 15 years of absence in Cité ardente. Founded in 1890 (and therefore more than a century old) this institution located on rue de Serbia had to close and move to Sprimont following the explosion of its oven in 2011.
In his big comeback, Groffy also brought back the recipe for his famous and delicious waffles, developed by Eric Coulée’s uncle, who today runs the house with his three daughters Anne-Cécile, Jennifer and Elodie. “The recipe has remained unchanged for all these years“, proudly assures the latter, responsible for production. “We make it a point of honor that they remain 100% pure butter, despite the current increase in this essential ingredient. It’s additive-free! Flour, milk, eggs, salt, sugar and yeast. The only thing that has changed is that we add a little less sugar, to match the current trend.”
A simple combination that gives a result that resonates “oufti” around the taste buds. Melting in every bite, tasty, golden and dressed with a delicate caramelized layer… there is reason to sing their praises on the stage of the Opera, located an egg’s throw away.
Apart from quality ingredients, what is the other manufacturing secret? “Everything is done by hand, day by day. To cook them, we use old waffle irons, which are almost no longer available, and which leave the waffle tender inside. And then we are not stingy with pearl sugar“, replies Elodie Coulée.
And at €2.60 each, the quality is still quite affordable. This is why it is better not to wait until the end of the day to covet them, and to form your own opinion.
