Thunderclap this May 31, 2024, Lysiane and Denis Marie, owners for 22 years of La Toscane, located at 56 rue Henri-Veniard in Flers (Orne), announce their retirement.
Immediately found, it was Franck Juin who decided to take over the reins of the establishment. Here, Same menu, same ingredients, he already has the recipe for success!
A complete reconversion
At 58 years old, the man from Rouen (Seine-Maritime) is not a chef by trade, but the director of an equestrian center in Clermont-Ferrand (Puy-de-Dôme).
A sector that has always inhabited and driven it.
That's all I've done my whole life.
But after 35 years working in the equestrian field, he decided to begin a complete career change in the restaurant business.
He then knows two things: that he wants to return to Normandy and open a pizzeria.
Several months of prospecting
Beginning in the fall of 2023, Franck's research quickly led him to Flers and Tuscany.
The one who only had a little training as a pizza maker will then spend the whole month of May with the former owners in order to appropriate the techniques and recipes of the chef of the time, and take the pulse of the customers.
I spent a month with Lysiane and Denis to get into the business.
He will reopen the establishment a few weeks later, with the same formula. “I haven’t changed anything. Same suppliers, same products and same quality.”
Looking for pizza maker!
Since opening, Frank Juin has worked as a pizza chef and is supported by his son in the service.
Happy with the success of the establishment, he wants to hire a full-time employee in the kitchen to allow his son to leave the business and him to concentrate on contact with customers.
Applications are therefore open for “a cook with pizza experience or a pizza chef”.
The restaurant is open every day (except Tuesday) from 12 p.m. to 2 p.m., and from 7 p.m.
