Philippe Duchemin, in his sixties has just opened his roasting workshop in Ste Livrade, putting the spotlight on this passionate entrepreneur.
“I have always had a passion for coffee, already in Montayral and Dausse, I had dabbled a little in roasting, it continued to run through my mind until my arrival in Lot-et-Garonne, (previously based in Bias for a year), until my arrival here in Ste Livrade, where I was warmly welcomed by the municipality”, explains the business manager.
“Fresh roasting coffee is an art that transforms green beans into a rich and complex taste experience. This meticulous process involves heating the beans to precise temperatures to fully develop their palette of aromas and flavors. Coffee lose weight and increase in size during roasting, releasing essential oils that contribute to the aroma and taste of the coffee. Each variety of coffee requires special attention to reveal its unique characteristics, whether notes. fruity, chocolatey or spicy”, explains this artisan roaster with passion.
The artisan offers for sale a dozen varieties of freshly roasted coffees that are sure to appeal to true connoisseurs. Especially in an age where people have automatic machines to grind grains.
“Whatever method you choose, it is crucial to grind the coffee just before brewing to ensure freshness and flavor integrity. Finally, the water used should be at an optimal temperature, usually between 90°C and 96°C. °C, for perfect extraction,” concludes the roaster.
