If oysters can be enjoyed all year round, the approach of the holidays accentuates the production as well as the consumption of this dish, an essential of Charente-Maritime. Although there are oyster crops throughout the coast of Nouvelle-Aquitaine, the department remains the main producer with 40% of regional production.
The label HCM (Charente-Maritime oysters) was created to highlight this culture. The crops that can present this label represent 3,000 hectares of aquatic surface. During the holidays, this sector sells 20,000 tonnes of oysters each year, which represents around 5 million baskets consumed throughout France and Europe.
Why is Charente-Maritime suitable for oyster production?
If Charente-Maritime oysters are so sought after and among the best in France, it is in particular because the territory is particularly suitable for their development.
The department's oyster beds are located in estuaries and sea basins. where tides, salinity and nutrient richness coexist harmoniously and allow ideal development of oysters. The presence of microalgae makes it possible to nourish the algae naturally.
In addition, the know-how of refining, essential to offering quality products, has been passed down for several generations between oyster farmers. This know-how combined with favorable natural conditions explains why Charente-Maritime oysters are unique and therefore in high demand among consumers.
