For his second participation in the competition Best Apprentice of (MAF) in pastry, Maëlia Leportoux20 years old, climbed to the top of the podium. “The first time, I finished 4th, so I wanted to try again,” says the young woman, who is starting her third year of training in the pastry-chocolate factory ofEric Braultrue du Tribunal in Fougères (Ille-et-Vilaine).

7 hours of work

Holder of a CAP pastry chef and a CAP chocolatier, Maëlia is currently in her first year of BTM (Brevet Technique des Métiers) in pastry making.

For this concourswhich took place on the Ker Lann campus in Bruz, she competed against nine other young pastry chefs.

I had to prepare twelve tartlets, two - for six people, two savarins for six people, molded chocolate candies and a creative chocolate piece on the theme of the Olympic Games.

All in seven hours. “It’s a lot of work, a lot of preparation. It takes willpower. She’s trained quite a bit. She came back here on Mondays, outside of working hours,” says Éric Brault, who is delighted with the dynamic that this participation in the competition gives to his company.

Maëlia Leportoux especially scored points “on production and organization in the lab” and the jurors gave her advice to improve, particularly on tasting.

Wise indications which will undoubtedly be useful for the regional events which will take place next November, in , on the theme of sweet festivities. “These are completely different events and themes. You almost have to start from scratch.” Determined, the young woman has already gone back to work.
