the recipe for this Mexican gratin

Emblematic of Mexican gastronomy, tortillas have gone far beyond borders and conquered our palates. These tortillas generously filled with meat, vegetables and covered in hot sauce are particularly filling (especially when accompanied by rice and red beans!). On his TikTok account, Delishaas offers us a gratin recipe based on particularly delicious enchiladas. He admits it himself, “this dish is not a traditional specialty, but it is delicious”!

Start by peeling and chopping 1 white onion. Heat a little oil in a large frying pan, and sauté half the onion for a few minutes, until translucent.

Then add about 450g of ground beef then salt, pepper, sprinkle with cumin and paprika and chilli powder, add a drizzle of chilli oil and mix well.

Add half a peeled and chopped red and yellow pepper, a clove of garlic and some jalapeno pepper. Mix well and simmer for about 10 minutes, until the meat is cooked and the peppers are softened. Pour in some enchilada sauce, then add two tablespoons of flour and a good handful of grated cheese. Mix again and remove from the heat.

Preheat your oven to 175°C. In a large baking dish, pour a little enchilada sauce.
