Two Lyon chefs from the Pullman hotel in Lyon have been crowned cassoulet world champions, under the noses of Toulouse specialists in this south-western dish.
It’s a coronation that must have made people cringe in the pink city. In Toulouse, the 9th edition of the cassoulet world championship was organized this Monday, January 20. And it is to Lyon that the trophy will go this year. Two chefs from Lyon, who work at the Pullman hotel, indeed won over the jury gathered at the Rex, in Toulouse, during an evening organized by Les Chevaliers du Fiel.
Five restaurateurs were in the running for the title this year. Three Toulouse restaurants, which have made cassoulet one of their specialties, La Maison du Cassoulet, Le Bibent and Maison Pardailhé, an establishment in Tarn, Cuq en Terrasses, and therefore the 4-star Pullman hotel in Lyon.
-A last minute guest
The latter was also invited into the selection at the last moment according to our colleagues from La Dépêche du midi, replacing a candidate who was missing. Which did not prevent the two Lyon chefs, Timothée Deguingand and Nicolas Ferrand, from winning the jury prize, for a dish which is not even on the menu in their restaurant.
The public prize was given to Maison Pardailhé. A meager consolation prize for the Toulouse region.
