Weekend in Dinan at Maison Pavie / A Parisian salad and goose fat puree

Who is finally living under the sun again, it’s time to go take a breath of salty air under the blue sky, escape to other horizons, it makes you want to go elsewhere and travel. I’m taking you to Dinan, not far from Saint-Malo, the corsair city that needs no introduction. Dinan is a pretty little medieval town on the banks of the Rance. A city of art and history. To begin our trip, we set down our suitcases at Maison Pavie, on Place Saint-Sauveur. A beautiful medieval residence from the 15e. What I like about this guest house is its traveling soul. Just its name is an invitation to travel. It is the birthplace of Auguste Pavie. Like any Breton, he also had a traveling soul. He was one of the greatest French explorers of the 19e. He was fascinated by Indochina. When we encounter his world, we go to the borders of Cambodia, the kingdom of Siam, Laos, we sail on the Mekong. And Maison Pavie is precisely an ode to Asia. Its emblem is a ginkgo biloba leaf. Each object, each room takes you on a journey: Vinh Long, Kampot, Champassak, Angkor Luang Prapang. My favorite is Vinh Long. There is a huge elephant mural above the bed. And the journey continues with Ghislain, your host, thanks to his teas and homemade pastries, which have tastes from elsewhere: like his vanilla cake…

What do you recommend we do in Dinan or the surrounding area?

Visit Dinan Castle. It was erected on the 14the by the Duke of Jean IV, and you will see it is more than a medieval fortified castle, it was a palace tower. Kitchen, state room, banquet room, retirement room, chapel… it rivaled the royal castle of . And the scenography transcribes this princely residence aspect well in the smallest details: the furniture has been reconstructed from illuminations. And second tip: take a trip to Léhon, a small stone village built around an abbey, Saint-Magloire. You have to wander through the village, have brunch at the café glutton and then return to Dinan via the towpath…a good breath of Breton air.

2 new preparations:

A salad, because the potato is also very good cold…well warm (you should avoid putting it in the fridge because that gives it a taste).

Parisian style / an ideal accompaniment for smoked or cold fish, but also cold meat.

– 1 kilo of firm-fleshed potato (charlotte)

– 20 cl of white wine

– 10 cl of neutral oil

– 3 cl of wine vinegar

– 1 tsp mustard

– Mixture of herbs (parsley, chives, tarragon)

– 1 shallot

– Salt and pepper

Boil the potatoes with their skins in a large volume of salted water / peel them and cut them into slices / pour the wine over them and cover / make the vinaigrette and chop the shallot / combine everything with the herbs.

A recipe that we know well in the South-West: mash with goose or duck fat (easier to find) / Joel Robuchon had a very interesting version in a book entirely devoted to potatoes.

– 1 kilo of firm-fleshed potato

– 150 gr of goose or duck fat

– Nutmeg / curry / salt / pepper

Prick the potatoes and cook them in the oven in their skins for 50 minutes / peel them and mash them / add the fat, a pinch of salt and the spices.

You can brown it under the grill before serving it.
