Created in 2016 by Mathieu Carrère, Maison Carrère initially specialized in the distribution of local products. “We worked directly with producers, developing together authentic recipes for delicatessens, wine merchants, charcutiers and butchers, in but also for export, particularly in Singapore. »
A chef with a star career
In 2021, the company is evolving with the opening of a Cours Victor Hugo establishment, in . “We wanted to share our passion with individuals. » First designed as a delicatessen coupled with a restaurant area, Maison Carrère quickly became a restaurant in its own right. “We found our identity and we have just celebrated our third anniversary. »
Since January 2025, chef Christopher Roussat has joined the house. His career is marked by experiences in great restaurants, notably at Moulin de Mougins under the leadership of chef Alain Lorca (two Michelin stars). After running his own restaurant and winning a green star at Domaine de Nazaire, he decided to join the adventure.
“After years in star-studded establishments, I wanted a more human project, where the main thing remains the pleasure of cooking and sharing. Working with people who share this vision was essential for me,” assures the chef.
The restaurant promotes local cuisine, sublimated without being over-transformed. “We are in the heart of the South-West and want to express the richness of its products, while opening ourselves to influences from around the world. »
Without claiming a precise label, the house offers sincere cuisine, where the product is at the center of the plate. “We could say that we do “cool gastronomy”! » jokes Mathieu Carrère.
A seasonal menu and suggestions allow you to explore more noble products, while maintaining an authentic and accessible approach.
The restaurant’s DNA is based on transparency and conviviality. “The kitchen is open, there is nothing to hide. Here, everything is done to encourage exchanges and sharing, including our large table with 14 seats, which can be privatized or shared. »
A renewal and new ambitions
The year 2025 marks a turning point with a name change. “The Maison Carrère brand having been sold to the GMD group, it was time to write a new chapter, with an identity that resembles us. » Other news (read opposite) will punctuate the coming months.
“Being a restaurateur today is a challenge. You have to know how to diversify while remaining true to your values. We want to continue to bring this place to life around sharing, authenticity and good products. »
