For almost twenty years, Jean-François Rouquette has been delighting epicureans at the gourmet table of the Park Hyatt Paris-Vendôme. Long before other palace chefs, he made his restaurant a culinary destination in its own right. Why hasn’t he gotten the second star yet? Mystery. Doesn’t the consistency of a cuisine capable of renewing itself demonstrate the excellence of assured talent? However, it undeniably contributes to it.
