A double-starred chef on the jury
On Monday, Théo, from the Auberge de la Haute-Joux in Bonnevaux (Doubs), launched hostilities. On Wednesday, it will be Philippe, from the restaurant “Chez Jane”, in Vesoul, to introduce himself. In May 2024, L’Est Républicain devoted an article following the arrival of chef Yoann Conte, two-starred chef from his own restaurant in Annecy and elected “Cook of the Year 2024” by Gault & Millau, and Norbert, Chef from 19.20 at the Prince of Wales in Paris, in the Vésulian establishment. They had posed in front of the establishment with a local influencer responsible for promoting regional products, Flooz flooz la fripouille.

Chez Jane, a family affair
Open since 1896, “Chez Jane” is a local institution run for generations by the family of Philippe, 50 years old. Although the latter did not hesitate to choose the path of cooking, he did not immediately join the family business. With his diploma in hand, he left to learn his skills in Paris where he met his wife, Sylvie.
“Dylan, the son of Philippe and Sylvie, already has a foot in the business! After training in gastronomic establishments in Switzerland, he is ready to take up the family torch. Philippe’s experience and Dylan’s audacity make father and son a complementary pair who, with the help of 4 employees in the kitchen, offer a menu inspired by the terroir and which changes according to market finds”, indicates the production company. Will the Vésulienne table be the best in Burgundy-Franche-Comté? Response at the end of the week.
