Mardi October 8 2024, Le Café de la Liberté, restaurant in Paillet, in Gironde, changes hands. After starting from nothing, seven years ago, Matthew Bourdon leaves Margot Bugnot with a business that displays complete almost every day and which is labeled Bistrot de pays.

“I believe much more in country settlements. » This is how we start Margot Bugnotnew owner of Café de la Liberté, to introduce its purchase of restaurant.

Before this new adventureMargot Bugnot was at the head of a establishment in the Saint-Pierre district : Margot’s house.

I was keen to create a place that resembled me, a warm, cozy place.

A first experience in Bordeaux for Margot Bugnot

In her Bordeaux restaurant, the resident of Latresne cooked and offered traditional French dishes from 2019 to 2023. This first establishment was a great experience. However, she regrets having gone through several episodes which complicated her task: “In four years, I had covid, the Yellow Vests and pension reforms twice”.

In Paillet, she recovers an institution which runs on average at 120 place settingsin summer and 80 in winter.

It’s a smooth change of ownership, but the restaurant and the team will remain the same.

In fact, the team of nine people set up by Mathieu Bourdon, does not lose any members. “It’s been the same staff since the beginning, seven years ago, and I have never known no departure since my arrival. We recruited since the restaurant experienced success since the opening,” argues the business manager.

During this period, the restaurant managed to be reference in several guides such as Le Petit Futé, Le Routard and Lonely Planet. He even got and label Country bistro which advocates the use of local products. “Here, the beef,it’s the Bazadaise the sturgeon comes from La Teste-de-Buch, the chicken from the Illats farm, the Landes pig…” argues Mathieu Bourdon.

Seven years at the head of Café de la Liberté

The Café de la Liberté was not his first business and his rule, to stay sept ans maximumat the head of a project, applies once again: “After seven years, I believe that we have not not enough perspective . You must be able to bring a fresh lookin every project.

From Tuesday, it’s the end of a great adventure and I’m going to take a little time, a little greenery. This departure is obviously accompanied by thanks for the customers who have followed me for all these years.

From 15 to 120 seats per day

He then thinks about his beginnings. A takeover of a closed place after a judicial liquidation. When it opened, the restaurant revolved around 15-20 place settings . A great development to achieve an almost complete room for each service and for which it is necessary reserve your tablequite early.

I’m not going to change something that works so well. The only difference perhaps is that I have more hair.

Expansion of the wine list

His arrival will just coincide with an expansion of the wine list. An essential addition for this passionate: “For the moment, it is a map only focused on the local area. I want to add some winesBurgundy or vin’s cinema ».

At the Café de la Liberté, the changeit is now “but in gentleness ».
