the gastronomy family is in mourning

A great figure in gastronomy and Talloires-Montmin passed away on Wednesday September 25. Charlyne Bise, who watched over the destinies of Father Bise’s Inn for half a century leaves the memory of a “great hard worker, who left her mark on the history of her passion for this profession”.

“If Talloires-Montmin is known, it is partly thanks to the couple, Charlyne and François Bise,” says Jean Favrot, who was mayor of this town located on the shores of Lake for 31 years. “They were one of the drivers of economic activity following François and Marie Bise, who created The Inn in 1903.

Queen Elizabeth II of England and President Nixon have in common the fact that they have passed through the gates of this establishment which was in tune with the Michelin guide, carrying three stars from 1951 to 1982.

After the premature death of François Bise in 1984, it was with her daughter, Sophie, that Charlyne took over the reins of Father Bise’s Inn. Thanks to chef Gilles Furtin, the gourmet restaurant will regain its 3e star in 1985, before losing it definitively in 1987.

“Always dressed to the nines, Charlyne Bise was a hard worker,” assures Jean Favrot. “Demanding with herself, as she had to be with her staff, she had great respect for the customer.” Aside from her job, “for which she had a real passion”, Charlyne Bise loved “the company of cats and was fond of traveling”.

“We owe a lot to this great lady”

Charlyne Bise retired in 2016, at age 78, half a century after taking over from Marguerite and Marius Bise. And left the keys of this venerable house to another couple, Magali and Jean Sulpice. “She gave us the chance to continue to tell the story of this house,” says the chef, proud to have been chosen by Charlyne Bise. “Thanks to her, we were able to express ourselves. We owe a lot to this great lady. She will always be there for us, and we will try never to disappoint her,” promises Jean Sulpice who has hung two stars on this legendary address.

The disappearance of Charlyne Bise plunged the entire gastronomic family into mourning. “She made history with her passion, her dedication and her love of cooking”, posted the two-star chef, Yoann Conte, highlighting “her benevolence, her kindness and her grace”.
