Do you like mayo eggs, blanquettes or even floating islands? That’s good! Born in 19e century in , broths are offered a second youth ! Many traditional restaurants are in fact going into “bouillon” mode. The concept, which is (re)flourishing everywhere in , is based on a simple principle: grandmother’s recipes, comforting and homemade dishes, served quickly, the everything at competitive prices.

Two Toulouse brothels will open

And Toulouse is no exception! The Pink City will soon even have its first two “Toulouse broths”the name chosen by Thomas Fantini, a well-known restaurateur in Toulouse, who chose to transform two of his restaurants – Bistrot et Compagnie in Labège and the Panoramique, located at the Cépière racecourse, into bistros of yesteryear. The opening of both establishments is scheduled for Monday January 20, 2025.

The director of Maison Pergo hopes to seduce Toulouse residents by focusing on dishes “ good and cheap ».

“We want to meet the expectations of our customers. We are in a somewhat difficult economic period, people are paying attention to their purchasing power. We therefore worked with our partners and our producers to offer a more accessible offer while maintaining quality and taste! », explains Thomas Fantini.

Very Toulouse broths!

And inevitably, Thomas Fantini’s broths will have a Toulouse accent, focusing on short circuits and local products.

“Thanks to our years of work, we can commit to large volumes which allow us to have better prices while preserving the remuneration of local producers,” assures the entrepreneur, who has among his eight restaurants La Pergola, Le Manoir du Prince and Le Bibent and which is also one of the main caterers in Toulouse.

“The broth is not just Parisian! In the past, it was a place of sharing where you could eat well and quickly for cheap. We will therefore find traditional slow-cooked dishes on the menu, such as stews, blanquettes, or beef bourguignons. We can offer pureed Toulouse sausages, aligot, good poultry from the Gers. We rely on warm grandmother’s recipes, so that we can treat ourselves at a very reasonable price! “.

Allow three euros for a starter (eggs, mimosas, leeks and vinaigrette, etc.), while the main courses start at 11 euros. Also count on a few euros extra for dessert.

If Thomas Fantini preferred to wait several months before launching his new concept, it is not for nothing! “We believe in it, because we have been preparing this new direction for a long time. People still want to go to restaurants and treat themselves, but their wallets are a little tighter than before. So there is a real wait! We have been testing the menus since last month in our restaurant in Labège and at the Panoramique and we feel that our customers are responding. This is encouraging! “.

Other openings to come?

Will these first two Toulouse broths be the first in a long series? This is the ambition of the entrepreneur, who however does not want to skip ahead.

“With Toulouse Bouillons, we created a real brandan identity, outfits… We already want to concentrate on opening our first two broths but of course, the product just needs to be developed. We already have colleagues who ask us if we will develop these restaurants as franchises. We really want to prove that it is possible to eat well and at a low price,” says Thomas Fantini.
