Mythical setting for an exceptional event! This Wednesday, May 29, for the twelfth episode of season 15 of Top chef, the candidates left the traditional culinary competition stage to officiate in a completely new place. For these quarter-finals which are not really ones (since The Hidden Brigade by Pierre Gagnaire returns next week with a candidate saved on a second chance), heading to the Gare de l’Est in Paris. There, the four candidates still in the running — Jorick, Marie, Pavel and Valentin — boarded a legendary train: the Venice-Simplon-Orient-Express. They found Jean Imbert there. It was there that he won season 3 of the competition, promising himself to return as head chef. A wish granted two years ago. But for one evening, the 42-year-old chef left the kitchens of the rolling palace to entrust them to the candidates.

The evening challenge: make their versions of legendary dishes on the menu of the rolling palace. At each stage (starter, main course and dessert), the winner qualifies for the following week and can therefore enjoy the journey with their brigade leader. First test around the lobster salad. Here is Valentine who stood out by offering his dish in a crystal glass, thus recalling the place’s tableware. But above all, it was its tomato jelly that hit the mark, bringing a touch of liveliness to the dish. Then place the dish with the beef Wellington which gave the three young chefs a cold sweat. The result turned out “tight“for Jean Imbert, who raised a “very good level of candidates” but also less successful things. He nevertheless wanted to salute the audacity and personality of Married, who had opted for vegetable touches in different places of his dish. These are therefore Jorick and Pavel who found themselves in the elimination round, to concoct a madeleine. To decide between them, it was Hélène Darroze and Paul Pairet, whose candidates had already been eliminated, who tasted blind. And it was Jorick’s madeleine combined with citrus fruits that was preferred to Pavel’s blueberry/black garlic/lime combination. Jorick therefore qualifies for the rest of the competition and eliminates Pavel.

This last episode of The Hidden Brigade by Pierre Gagnaire saw his rules somewhat disrupted. Indeed, if until now, two candidates were saved each week, this time, there was no only one drafted by the three-star chef and it is with this candidate that he will join Top chef next week in the quarter-finals. For this final test, the chef asked Quentin, Clotaire and Pavel to make a surprise dish in order to show both their creativity and their technical skills. If the tasting judges (chef Pierre Gagnaire and culinary critic François-Régis Gaudry) liked the combination of scallops/guinea fowl/mushrooms/Jerusalem artichoke and the tile that covered Quentin’s dish, they expressed a “small downside” on cooking poultry. A technical surprise also chosen by Paul after an oven problem. But the Marseille chef created two plates, one around an eel tartare, the other with a broth. Very intrigued, the two jurors greeted the “taste journey“that he proposed, even qualifying it”of extraterrestrial“.”That’s a damn cheeky proposition.“, even underlined the journalist. Finally, Clotaire wanted to highlight the Landes and the fires that ravaged the region through a dish around the mushroom and the forest. Its surprise lay in its jelly which turned into broth once the pine thorns were burned. A “strong message” which touched the hearts of the two jurors. And it was Clotaire who was saved and will return Top chef next week in the quarter-finals with Pierre Gagnaire. Pavel and Quentin are definitively eliminated from the competition.
