Lilian Bourgeat’s XXL boots take pride of place at the entrance to the vegetable garden. 1,000 m² where vegetables, plants, aromatics and even fruit trees grow, in full bloom, on the banks of the Loire. The Nantes market gardener, Olivier Durand, is experimenting there “the cultivation of vegetables and other edible plants”. Two hundred varieties, including tomatoes, peppers, tree fruit, basil, mint and chili peppers. “The objective is to promote the market gardening tradition and integrate our modernity”, explains Richard Baussay, culinary promotion manager at Voyage à Nantes. An opportunity to discover some stories of Nantes heritage, thanks to emblematic vegetables such as the Chantenay carrot, Gloire de Nantes or Blonde de Doulon lettuce.

The vegetable garden, a space for experimentation

From today, the Cantine’s vegetable garden will finally be able to welcome visitors all day long, until September 29. A novelty. “We felt great frustration from the public, who were prohibited from entering the vegetable garden, notes Richard Baussay, who points more and more curious people, eager for information and exchanges.”

From July 6, this redevelopment will allow tasting workshops and guided tours for schools, leisure centers, locals or external visitors. “We will be able to discover certain flowers that are edible or herbs that leave their scent on the fingers,” explains Olga Barazer, market gardener and vegetable garden mediator.

Continuing with La Cantine du Voyage, the vegetable garden is defined as a space for experimentation. Its principle is “to enrich Nantes gastronomy with new flavors by associating chefs, market gardeners or mixologists”, explains Olivier Durand. If certain plants are validated by the market gardeners and chefs of Tables de Nantes, the vegetables or herbs will perhaps garnish restaurant plates. They will also appear on the menu of the Cantine Cocktail Club, for cocktails concocted using plants from the vegetable garden.
