Led by the University of South Florida and the Tampa General Hospital Cancer Institute, this study analyzed more than 100 tumor samples. Researchers observed that cancerous tissues contained a high proportion of bioactive lipids, inflammatory molecules. These compounds, often derived fromultra-processed foods like the chipsTHE desserts and industrial breadsTHE cooked mealsor the cold meatsdisrupt the body’s immune balance.
According to Dr. Ganesh Halade, co-author of the study, “molecules from processed foods directly unbalance the immune system and promote chronic inflammation”. Clearly, these foods do not just satisfy our gourmet desires: they could well fuel the development of tumors.

These foods responsible for the explosion in cases of colon cancer?
Rapidly increasing among young adults, colon cancer is today the second cause of cancer death among women and the third among men in France. In 2023, it is estimated that around 45,000 new cases will be detected each year in France, and nearly 18,000 deaths are attributed to this disease each year.
If this trend is worrying, the increase in diets rich in processed foods seems to play a major roler. These products made with refined carbohydrates and saturated fats promote inflammation, making the body less able to fight tumors. Conversely, the tumors the researchers analyzed were low in restorative compounds, found in foods like leafy green vegetables and fish rich in omega-3. These would act as key elements to reduce inflammation and strengthen the immune system.

Which anti-cancer foods should you choose for your health?
Researchers highlight a promising avenue: the role of whole, unprocessed foods. “Our bodies are designed to actively resolve inflammation with bioactive compounds from healthy fats, like those in avocados.”explains Halade. Professor Timothy Yeatman, lead author of the study, likens cancer to a “chronic wound that does not heal.” He points out that preliminary trials, conducted with a modified form of fish oil, have shown encouraging results in reducing inflammation. This could well revolutionize anti-cancer treatments, by complementing medications with a suitable diet.

While waiting for innovative treatments, experts advise limit ultra-processed products and of favor a diet rich in vegetables, fruits, fish, legumes and whole grains. In short, it’s better to swap sodas and donuts for spinach and salmon. As Yeatman summarizes, “Focusing on natural foods is the best chance of avoiding illnesses before they even start”.
