Alain Dancar has had a varied professional life, always guided by one key word: passion. Similarly, three years ago he trained as a brewing process technician, after spending two years brewing beer as an amateur.
He has just opened the Vovo brasserie, on rue Fanfonne-Guillierme, a stone’s throw from the arenas. A great address for an establishment whose name refers to that of a famous bull bull born in the middle of the last century.
It is in the heart of his establishment that the brewer tells the secrets of making his beers: “ The most artisanal production possible, which is broken down into several stages and involves a lot of equipment.”
During manufacturing, great attention is paid to hygiene: “The beer is cooled quickly to avoid the development of bacteria.”
Develop recipes based on olives, lavender…
Besides water and yeast, the two major ingredients are malt and hops which give beers their characteristics. And their choice is important.
“There are a hundred different malts, all having their own taste, more or less typicalexplains the brewer. As for hops, they are used to bring bitterness. It may taste like infused hay, passion fruit or citrus.” specifies Alain.
The brewery’s permanent range consists of three types of beer. It is currently supplemented by Christmas beer, flavored with spices. But Alain wants to develop other recipes, including ephemeral beers with flavors of olive, lavender, Camargue salt, fig, or even crabapple, a small wild apple.
The public can come and meet Alain at 8 rue Fanfonne-Guillierme, Tuesdays and Thursdays, from 5 p.m. to 7 p.m. He will be happy to show you around the brewery and explain the art of brewing, while presenting his products.
