The orange tomato also has a high vitamin A content (10 times more than most other tomato varieties), because it contains beta-carotenes, a pigment that is converted into vitamin A by the body. Finally, the red tomato acquired its red color following various crossings and selection processes. It contains lycopene, an antioxidant which possibly contributes to protection against carcinogenic substances.
An ally against blood pressure
Spanish researchers conducted a study on nearly 7,000 people at high risk of cardiovascular disease, that is to say they had a significant risk of having a heart attack or stroke.
