Eating fries every day: what are the health consequences?

What if we still want to eat fries every day? It’s possible. But only baked in the oven then. “We will have little loss of vitamins and minerals, we will retain the crispy side, and it is not greasy at all. Then, we can add a little oil so that it is not too dry.”

The fries, in this case, will easily replace pasta or rice, as starchy foods and will be accompanied by proteins and vegetables. With a significant advantage: the potato, per 100 g equivalent, is less carbohydrate and therefore caloric than pasta or rice. Even healthier option: sweet potato fries. “It is an interesting vegetable because we find more minerals and vitamins there than in potatoes and it also contains prebiotics, which are soluble fibers, excellent for transit and general health. “

Fat or oil: the right choice

In terms of taste, if you want to maintain the frying aspect, there is no question, it is the beef breast which wins all the votes. In terms of nutrition, however, it is better to favor vegetable oils… “Olive or peanut oil is ideal, because they are oils that resist cooking well, they can be heated to very high temperatures without deteriorating, unlike oil rapeseed, for example.”

However, the dietitian nutritionist recognizes it, fries are less fatty when they are cooked with beef breast. “It penetrates less to the heart, it’s true, it has fewer calories, but they are saturated fats, which is not good for the cardiovascular system.” Other things to know: the bigger and thicker the fries, the less fat they will be. And double cooking helps reduce fat absorption.

Finally, more generally, and to get away from the fries, the potato has significant nutritional qualities. “It remains a vegetable on paper that we consider starchy, because it contains 20% starch, that is to say, carbohydrate, which necessarily makes it richer in sugar than a salad leaf… But the potato has a significant content of potassium, vitamin B, calcium and magnesium. It is rich in vitamins and minerals. It contains a lot of water, as well as quite a bit of fiber in its skin. that’s why it’s better to eat it in your country clothes.”

For the sauce? “The least caloric is mustard. Next comes ketchup, which contains more sugar, but no fat”concludes Damien Pauquet.
