This former palace chef now serves his beers made in Oise in a prestigious restaurant

A new page is being written for this head brewer. After opening a tasting space for its own beers made on site in Montataire last year, Romain Schaller now serves its fermented drinks in the restaurant on the estate faceremaining faithful to the Oise.

It is therefore no longer possible to sip glasses in the place where he makes his beers, near the vats and fermenters, in the Creillois basin.

Its craft beers arrive in Raray

Cet former palace chefwho has worked among others at the Intercontinental in and the Mont Royal in Chantilly, now manages the restaurant at the Raray golf course, a stone's throw from the castle which hosted the filming of “Beauty and the Beast” by Jean Cocteau in 1945.

A prestigious restaurant in which he wants to create “a friendly and relaxed place, where people feel at home, in a magnificent setting”. Both for an afternoon and an evening.

“I took my shooters with me. I also plan to move my brewery here but for the moment, I brew on Tuesdays in Montataire, on my day off,” notes the specialist.

“A beer brewed by the boss makes the difference”

Here, as soon as a customer approaches the bar, they are offered a “little beer?” » Then, secondly, “blonde or amber? »

A beer brewed by the owner makes the difference with customers. In addition, we are well located because between Senlis and Crépy-en-Valois, there is not much to go out.

Its three artisanal recipes, called “Rayon de soleil”, “Red beard” and “Twilight”, are already winning over new customers. “Eventually, we will add other taps to really create a beer bar,” the brewer plans. “We will also focus on cocktails to please everyone.”

“Unique in the Oise”

Here, chef Romain Schaller also offers a starter, main course and dessert menu for 36 euros. “It’s accessible, especially since we only cook with good products,” explains the restaurateur. But also boards, foccacia, wraps and waffles, to enjoy at any time of the day.
