Sremember last summer… the end anyway. Hémicycle, by Stéphane Manigold, Datil by chef Manon Fleury, Oktobre by Martin Maumet, Baca’v Boulogne, the bistro by Émile Cotte: these restaurants were in the news for the 2023 culinary season.
Twelve months later and, as tradition dictates, a new wave of addresses is announced. Some took advantage of the summer to open discreetly, just to get their feet wet. Others have just done so, between the return from vacation and the start of the school year. The last ones are refining the last details. Among all these openings, here are the ones we are particularly scrutinizing.
New restaurants outside Paris for the new school year
Brown (Ceret, 66)
Back to basics for Kevin de Porre, born in the Paris region but who grew up in Céret where he is preparing to open his restaurant. Promising, because after stints at Lasserre, the Plaza Athénée and Kei Kobayashi, he had won a star for the restaurant Contraste (Paris, 8e), in duo with Erwan Ledru. Opening in September.
Sage (New Year’s Eve, 61)
After cooking for the Olympic athletes and revisiting a totem dish of French gastronomy, chef Amandine Chaignot (Pouliche and Café de Luce in Paris) will unveil her Percheron inn which will house a gourmet restaurant and a bistro. Opening in October.
Turbulent (Trouville-sur-Mer, 14)
