This year, the price of a coffee in a restaurant was on average 3.80 francs. in the canton of Jura, ten centimes more expensive in the Bernese Jura.
It was down slightly in the first region compared to 2023, and up – also slightly – in the second. These figures emerge from a survey from GastroJura and Gastro Grand Chasseral carried out in collaboration with Gastroconsult SA.
Increase considered insufficient
“Prices in restaurants are stagnating or almost, while prices for supplies continue to rise. The situation is becoming more and more complicated for professionals in the sector,” comments Jean-Louis Donzé, deputy director of Gastroconsult SA.
The increase in consumption prices for 2025 will amount on average to 1.17% in the canton of Jura, and 0.28% in the Bernese Jura. Gastroconsulat judges “that this increase, which is insufficient, will not ensure a minimum of profitability in certain public establishments.”
Jean-Louis Donzé continues: “The situation is increasingly tense, especially since the unions considered the 1.5% to 2% increase in salaries, negotiated within the framework of the collective agreement, to be too low. A tripartite commission will have to decide in mid-January 2025. Restaurateurs and consumers alike are in difficulty An increase of ten cents for a coffee and now a psychological threshold is crossed. Sometimes, the boss is subjected to pressure from his customers. And he is therefore afraid to adjust his prices.”
In 2024 in the historic Jura, the price of a daily menu was negotiated between 18 and 19 francs, that of beer between 4 francs. and 4.30 francs. A mineral water (3 dl) cost 3 fr. 60 on average in the Jura, at 4 fr. in the Bernese Jura.
