After Ma Pâtisserie Healthy and Craquage 100% chocolat, the blogger Hervé Cuisine presents Healthy and Cheap Menus, his third book published by Albin Michel.

HERVÉ CUISINE ALBIN MICHEL – Hervé Palmieri, the blog with four million subscribers known under the pseudonym Hervé Cuisine, presents twenty menus for every day, healthy, balanced and inexpensive (menu for less than €15 for 4 people). The equation is simple: it applies the rules of diet with half vegetables, a quarter animal or vegetable proteins and a quarter starchy foods. Based on these principles, Hervé Cuisine imagines menus composed of a starter, a main course and a dessert which meet these criteria while taking into account the seasonality of fruits and vegetables. One of the points that the blogger mentions is the reduction in the consumption of meat (often expensive) in favor of less expensive plant-based alternatives. Finally, the chef recommends transforming leftovers into new recipes because it’s good for the wallet!
Hervé advises to always have at home an assortment of spices such as curry, ras-el-hanout or zaatar to flavor the dishes, a few aromatic herbs in your garden or on your balcony and a few ingredients such as soy, Sriracha, honey or coconut milk to energize dishes. He presents his Top-Ten essential utensils in his kitchen (garlic press, citrus press, vegetable peeler, etc.) which he uses regularly and then presents his 20 complete and balanced menus. As a starter, some soups, salads, vegetables and verrines to whet the appetite. In dishes, recipes based on chicken or fish but also pasta, vegetable burger, veggie curry, omelette, risotto… The desserts will be a dream for all gourmands. From pineapple carpaccio to express chocolate mousse, the chef offers recipes for mousses and small cakes that he varies with the seasons. At the moment, I recommend the Chocolate and Sweet Potato Moelleux or the Light Apple and Cottage Cheese Muffins. The book is divided into twenty menus, each recipe is presented in the form of a sheet including preparation and cooking times, the list of ingredients and the different stages of production. For certain recipes, the “Tip” section is the little extra that the author adds to give some additional advice. The sixty recipes are an inspiration for varying your meals without breaking the bank and without spending too much time, a gourmet alternative to junk food.
